Pasta Puttanesca



I have been trying some new recipes lately and there are a few noteworthy ones that I would like to share. I won't even try out my camera skills on them so I'll just use the sites beautiful ones instead.

Smitten Kitchen's Pasta Puttanesca takes literally 5 minutes (the main reason for its noteworthiness) to throw together and was super yummy. Of course my kids wouldn't touch it, but you can't please everyone so ya got ta please yourself. Don't mind if I do. She says that you will have all ingredients in your pantry already, but seriously who actually owns anchovy paste? Seriously, that stuff smells funkylicious.

Pasta Puttanesca
Adapted from Ellie Krieger

8 ounces regular whole-wheat thin spaghetti, vermicelli or angel hair
1 tablespoon extra-virgin olive oil
2 cloves garlic, minced
1/3 cup chopped flat-leaf parsley
1/4 cup pitted chopped Spanish or Greek olives
2 tablespoons capers
1 teaspoon anchovy paste
1 tablespoon fresh oregano leaves or 1 teaspoon dried
1/8 teaspoon crushed red pepper flakes
1 (14-ounce) can diced tomatoes
3/4 cup chopped fresh arugula
1/4 cup grated Parmesan

Bring a large pot of salted water to a boil, add pasta and cook according to the directions on the package.

While the pasta is cooking, heat the oil in a large skillet over a medium flame. Add the garlic and saute until fragrant, about 1 minute. Add the parsley, olives, capers, anchovy paste, oregano and crushed red pepper to the skillet, and saute for 2 minutes more. Add the tomatoes and simmer for about 5 minutes. Stir in the arugula and simmer for 1 minute more, until the greens wilt slightly.

When the pasta is done, drain it and add it to the skillet, tossing it with the sauce to combine. Top with grated cheese.

easter


The only decent shot of Easter morn. Just be glad they have clothes on. Since we had just gotten back from our trip to Cali late the night before and because Can had an early church meeting we had to WAKE the kids up to look for eggs! I have never had to do that in my 9+ years of parenting!

Product endorsement


To some of you this might seem a strange endorsement, but I LOVE my wide mouth funnel. I use it all the time and I don't know how I ever lived without it. The end.

Facts of Life


Thanks to some help from the Eyre's book and the book below, I did it. I had the birds and bees talk with Elyse. It would have been pretty awkward had I not read pretty much verbatim from this book. Judge away, it was awesome. But boy am I glad its over!

24 Weeks!


If you and I are friends on FB you may have noticed that I posted a similar picture a few days ago. I had a small photo session with the self timer, I make a very intriguing subject for myself and I just couldn't stop taking pictures. Or it might have been I was blinking, Levi was jumping at the camera or something else that would make it 3 reasons. (did you watch 30 rock? if so then you will get the last thing. if not then you are lame.)

Colorado

I'm back. I know you all missed me.

I never blogged about my trip to Colorado a couple months back. I surprised my sister Alicia, who lives in Boulder, with a visit to give her a break and hang out. It was a great surprise, I snuck up behind her in the kitchen at 630am and grabbed her hah! it was great.


This is Sagey Poo and Mister Micah. She has THE sweetest children in the world, mostly because she is the sweetest mom in the world but also because I think she got really lucky in the obedient/sweet children department. Lucky duck.


Sadly when we're together we don't take pictures :( But we do have fun and I do lots of dishes.....hmm. She is due any day now with number 3 so I'll get to see her again soon! A huge shout out goes to the Can Man who (once again and as always) took charge of the house, children and unruly dog for a whole week so I could see Alicia. Seriously dude, you are thee best.
