Mother's Day

Today was my 6th Mother's day...well really 7th if you count my first when I was about 4 weeks pregnant with E.

Except for the fact that L was sick all day and we had to stay home from church it was great. I woke up to a lovely breakfast of yummy fruit and flowers (the one in the middle E made at the botanical gardens)






And then C cooked a fabulous dinner of coconut curry chicken over rice....yum! We'll definitely work this one into our meal rotation.





Chicken and Sweet Potato Curry-in-a-Hurry

2 TBS. coconut oil or olive oil

1 large sweet potato (or yam), diced

Sea salt and freshly ground black pepper

2 TBS. curry powder

1 lb. chicken breast, bite-size chunks (can use ½ lb. if you like)

1 c. onion (1 medium sized)

1 TBS. flour (white or WW)

2 ½ c. chicken or vegetable stock

½ c. cream or milk (we used coconut milk)

¼ c. pineapple-mango jam (a couple of heaping TBS.but we left it out b/c we didn't have any...I'm sure you could also use any kind of chunky jam/chutnety/salsa)

2 TBS. cornstarch & 4 TBS water (optional—I add it to thicken sauce)

  1. Preheat a large skillet over medium-high heat with the oil. Add the sweet potatoes to the skillet, season with salt, pepper and curry powder, and cook, stirring frequently, for 3-4 minutes, or until lightly browned.
  2. Scoot the potatoes over to one side of the pan and add the chunks of chicken, season with salt and pepper. And cook, browning slightly for 4-5 minutes.
  3. Add the onions and toss to combine. Add the flour and continue to cook for 2-3 minutes.
Add the vegetable stock, milk and jam, bring to a simmer. Add cornstarch/water mixture and cook for 10 minutes or until potatoes are nice and soft. Serve over rice.

I love my family and am so blessed to be the mom of my sweet (sometimes) kiddies and my amazing (all the time) hubby.

I also want to give a shout out to my two moms...Maria and Debbie.

Mom you are amazing and I admire your strength and perseverance. You are such an example to me. You are so much fun and I am so glad that we have become so close over the past couple of years, thanks for being my best friend...I love you!

Debbie...you are so patient and raised such an amazingly beautiful son. I admire your strength so much. You have been so accepting of me from the very beginning when I was a little 17 year old who wanted to marry your son! Thank you for being my sweet friend and such a wonderful grandma to my kiddies....I love you!

To all my friends who are mothers...thank you for your examples, I learn from you guys all the time!

kassie, i do know you! i totally remember you from high school and living with the maybe's. weren't we in the same ward for a while??
