Easy Chile Recipe

My friend Kirstin posted this super easy really yummy chile recipe on her blog. It was a HUGE hit at my house. I made a few tweaks.

1.5 pounds ground beef (I only had 1lb)
2 medium onion, chopped (I used one large)
2 garlic cloves, finely diced
1/4 cup chili powder (plus about 1tbs extra, could have been more though)
1 Tablespoon ground cumin (little extra as well)
1 tsp oregano
One 32 ounce can tomatoes-chopped or crushed
One 16 or 32 ounce can tomatoes-chopped (I used 16 oz chopped and put it in the blender for a few seconds)
1 Tablespoon dry mustard (didn't have it so I used dijon mustard)
One 28oz can kidney beans-drained
1-2 tsp salt
1/4 tsp black pepper

optional: 1/3 cup maple syrup (recipe called for brown sugar and I used raw agave, Kirstin used syrup)

Garnish with: chopped green onions, cilantro and guacamole. (too lazy for any of this, but I'm sure its great :)

In a large pot with a thick bottom cook the meat, onions, garlic, chili powder and cumin over medium heat. When the meat is cooked and the onion is translucent, stir in the tomatoes, maple syrup, mustard, and salt. Bring to a boil and simmer on low for a half hour stirring occasionally. Add the can of beans. Cover and simmer for 30 more minutes, stirring occassionally.

I love the "too lazy" part. That would be me too. I don't need to garnish when I'm just gonna eat it 5 seconds later. Sounds yummy!

hi kassie... snuck around and found you through ruth. i've been craving some good chili lately (although it's 90 degrees outside... ??), so i may give this a spin tonight. yum!
